Chia Pudding

beks-chia-pudding-cropHere’s the Chia Pudding recipe that I use (from The Whole Pantry app):
In a glass jar place
2 tablespoons of chia seeds
1 tsp vanilla extract
1 cup of Coconut or almond milk
Shake the jar well and put in the
fridge overnight.

My adaption:
4 tablespoons chia seeds
1 cup coconut quench
1/2 cup filtered water
1 tsp vanilla extract

I make mine quite bland so that I can adapt it to whatever I want: stir through some cacao and creamed coconut for a creamy, chocolatey treat, or use as is in smoothies.  Very yummy with some yoghurt mixed through and topped with our activated nut granola!

And here is Bek’s recipe (who recently did our super smoothie presentation)

  • 1 can organic coconut milk
  • 1/2 cup black chia seeds
  • 2 x tablespoons cacao powder
  • 1/4 teaspoon vanilla powder
  • 2 x tablespoons grade B maple syrup

Mix all ingredients into a small glass bowl. Once powders and chia are mixed in and starting to thicken cover & put into fridge for 30 mins.  After 30 mins, stir again and leave in fridge for another hour or until you reach the desired consistency.

Prep time: 5 mins – Will last around 3-5 days if chilled.
